Our progress is measured by a Japanese Carcass Camera system that is standard in Japan, but it is a breakthrough in most other countries including the US. The camera system processes a digital image of the carcass that not only assists us in creating a high quality product, but also remains as the most important tool to grade and price our beef accurately and fairly. The Japanese Grading System we use is designed specifically for Wagyu cattle and therefore exceeds the grading capabilities of the commonly used USDA grading system.
